Also known by Italian gardeners as Finnocchio. Leaves have a licorice-like flavor, and celery-like leaves. Can be blanched and used as a cooked vegetable. (Foeniculum vulgare azoricum 'Rubrum')

Medicinal: Fennel is used as a carminative to relieve flatulence and colic while stimulating digestion. It is also anti-spasmodic, anti-inflammatory, and is similar to anise in calming bronchial coughs. It has estrogenic activity and is used to stimulate milk flow in nursing mothers.

Growing instructions: Biennial in zones 2-5, perennial in zones 6-10. Germination at 70°F in 7 to 14 days. Direct sow. Space 6" apart. Full sun. Grows 36"-48" tall. Maturity in about 90 days.
