Sweet Peppers


Bell peppers, another member of the nightshade family, are very high in vitamin C, with a single one providing up to 169% of the recommended daily intake. Other vitamins and minerals in bell peppers include vitamin K1, vitamin E, vitamin A, folate, and potassium. A popular ingredient in stir-fries, sweet peppers can also be stuffed with breadcrumbs and baked, tossed into salads raw, or roasted and enjoyed on their own.
